Pistachio
Antep variety of pistachio, also known as the "green gold", has a big share in Turkish dessert making.
Antep pistachio's homeland is Turkey, Iran and Turkmenistan. A tree of the mastic family, the pistachio presently grows mostly in Iran, USA and Turkey. The Iranian variety, the most abundant and the most well-known one in world markets, is bigger in size but tastes rather bland compared to other varieties. Contrary to the Iranian and the American pistachio, Turkish pistachio grows on the steppes instead of cultivated land and therefore grows free of agricultural methods like watering, fertilising and pesticiding. That's why it is much more natural and tasty, even if expensive due to its low productivity rate.
Pistachio has known effects of reducing blood cholesterol and preventing blood sugar rise, is a rich source of proteins, phosphorus, fatty acids, vitamins E, B and C and fibers. We only use local Antep pistachio in our pastry and syrop based sweets as well as our exclusive specialty the pistachio pudding.
