Eggs of old you'd never had enough, A taste that makes the breakfast a hearty one...

Do you know that a single egg supplies almost half of an adult's daily need for Omega 3 fatty acids? Eggs being such a valuably nutritious food item, we in Galata Muhallebicisi not only take care of their freshness but also of their origin. The eggs we use – served in dishes in our restaurants or made available for you to buy raw at our grocery stores – all come daily from free-range chickens that enjoy open air in our farm in Ambarlı.

Eggs should preferably be soft-boiled for about 2 minutes to be served "à la coque", or fried briefly on a copper skillet with lightly salted butter with the "sunny side up". Protection and welfare of farm animals became a serious issue for debate in Europe following the publication of Rufth Harrison's book Animal Machines in 1964. Beginning with the 2000's, the European Union decided that the battery cage raising be abandoned and replaced gradually by the free range system. From now on, hens will be raised to lay "organic" eggs (as Europenas call them) or "village eggs" (as we call them) in the semi-intensive raising system which has the barns connected to open ground pasture where hens can roam. Thus they will have their nest boxes, perches, deep litter, be provided with straw for bedding, rooting and chewing, and at the same time benefit from automatic feeders and drinkers. Laying hens classified as "free-range" should not be fed with any food containing chemicals or drugs or GMO's.

Storage of eggs
Eggs are among the foods that can go bad very quickly. In fact, the decaying process starts right after laying. Stored eggs not only lose moisture, but also are prey to the air-born bacteria and other micro organisms that find their way in through the pores, which only fastens the decay. The size of the little air-bag on the round side of an egg is a sure indicator about its freshness.

The best way to preserve eggs is to keep them away from heat. If they need to be stored, eggs should be stored at 10-13 degrees (C) and not be washed.
